Innovation workshop - Sugar reduction
Everyone in the food industry is interested in sugar reduction and especially companies whose core business are sweet treats, like Patisserie Walter, they are craving for sugar reduction solutions, which don't harm the quality of their amazing products.
That's why we got invited by Patisserie Walter end of June to explain and demonstrate different ways of reducing the sugar content in desserts to their awesome team of Pâtissier's.
Starting with the explanation of characteristics of helpful ingredients, like sugar alcohols, sweeteners and fibers proceeding to the demonstration of different application in a sugar reduced Ice-cream, meringues, espumas, fruit chips & glazes.
It was a pleasure to meet the passioned teams of Patisserie Walter and hope to meet them again soon.
